Green Beans with Garlic and Mustard Seeds

From Easy Indian Cookbook by Manju Malhi

Note: this recipe just sounds interesting, so I saved it.

3 T peanut oil
1/2 tsp brown mustard seeds
3 garlic cloves, chopped
2 green chilies, finely chopped
1 onion, finely chopped
14 oz fine green beans, topped and tailed
1 tsp ground cumin
1/4 tsp salt

1. Heat the oil in a large skillet over medium heat. Add the mustard seeds and fry, stirring constantly, 30 seconds or until they splutter. Watch carefully so they do not burn.

2. Add the garlic, chilies, and onion and continue frying, stirring frequently, 3 minutes or until the onions become soft. Add the beans and fry 1 minute longer.

3. Stir in the cumin and salt and continue frying 2-3 minutes or until the beans are tender. Serve hot.
