Pumpkin Pie

Libby's pumpkin puree can

Note: This is my mom's favorite pumpkin pie recipe, so I make this every year for Thanksgiving. I tried a different recipe one year, just out of curiosity, and thereafter she always asked me when I said I was making the pumpkin pie, which recipe I was going to use. And then I would reassure her, I would make the Libby's.

3/4 c sugar
1/2 tsp salt
1 tsp cinnamon
1/2 tsp ground ginger
1/4 tsp ground cloves
2 eggs
15 oz or 1 3/4 c pumpkin puree
1 1/2 c evaporated milk
1 pie crust

Combine the eggs, sugar, salt, cinnamon, ginger, and cloves in a mixing bowl. Stir in the pumpkin and then gradually add the milk.

Pour into pastry pie crust and bake for 15 minutes at 425 degrees. Reduce the heat to 350 degrees and bake for 40-50 more minutes, or until a knife inserted near the center comes out clean.
