Cocoa Brownies

from Wild About Brownies cookbook, which was my very first cook book and given to me by my mom

Yield: about 16 brownies
Oven: 350 degrees
Bake time: 30-35 minutes

INGREDIENTS
3/4 c all-purpose flour
1/4 tsp baking powder
1/4 tsp salt
1 c sugar
2 eggs
1/3 c vegetable oil
1/3 c unsweetened cocoa
1 tsp vanilla extract
1/4 tsp almond extract (optional)
3/4 c coarsely chopped walnuts

METHOD
Preheat the oven to 350 degrees and grease the bottom and sides of an 8-inch square baking pan.

In a small bowl, stir together the flour, baking powder, and salt. In another bowl, mix together the sugar, eggs, and oil with an electric mixer (or by hand, which is usually how I do it). Stir in the cocoa and extracts until blended. Stir in the flour mixture just until combined. Stir in the nuts.

Scrape the batter into the prepared baking pan and spread evenly with a spatula. Bake for 30-35 minutes or until a cake tester inserted 2 inches from the center comes out almost clean.

Cool the brownies in the pan, set on a wire rack. Cut the brownies, and then store in an airtight container at room temperature.

My favoritest brownies. Favoritest, favoritest, favoritest. I was afraid I had lost this recipe forever, but then David found the cookbook and I made sure to type it up here quickly so I wouldn't lose it again.
