Starbucks Lemon Loaf

A "Top Secret" recipe that I copied from Facebook

For the bread
1 1/2 c flour
1/2 tsp baking soda
1/2 tsp baking powder
1/2 tsp salt
3 eggs
1 c sugar
2 T butter, softened
1 tsp vanilla
1 tsp lemon extract
1/3 c lemon juice
1/2 c oil (recommend coconut oil)

For the lemon icing
1 c plus 1 T powdered sugar
2 T milk
1/2 tsp lemon extract

1. Combine flour, baking soda, baking powder and salt in a bowl.
2. Use a mixer to blend together the eggs, sugar, butter, vanilla, lemon extract and lemon juice in a medium bowl.
3. Pour dry ingredient into the wet ingredients and blend until smooth.
4. Add oil and mix well.
5. Pour batter into a well greased 9x5-inch loaf pan.
6. Bake at 350 degrees for 45 minutes or until a toothpick stuck into center of the cake comes out clean.
7. Make the lemon icing by combining all the icing ingredients in a small bowl with an electric mixer on low speed.
8. When the loaf is cool, remove it from the pan [probably want to do this after 10 minutes] and frost the top with the icing. Let the icing set up before slicing.
