Mojito Marmalade

A search for mojito marmalade turned up a few hits for prepared jars, but no recipes! So here are some rough notes from my first attempt.

6 limes (four rather small, two rather large)
1/2 c white rum
1/4 c fresh mint
1 star anise
2 T lemon juice
3 c sugar
1/4 tsp pectin

I used the same basic method as Marisa McClellan's Three Citrus Marmalade outlined in her book Food In Jars. I "supremed" the limes by cutting the peel and pith off all the way around, and then cut the sections out of the membrane. I scraped as much pith from the peel as I possibly could (a very time-consuming process that I will do differently next time. hello, microplane!), and then I think I chopped it up before cooking it, but can't remember for sure.

Anyway, then I boiled the peel with water, rum, mint, and a star anise until it was tender, about 30 minutes. Then pulled the mint and star anise out, poured the water and peel into the pan with the fruit, and then cooked to set point. Jar and processed for 25 minutes (I think; would have to check the book again).

At least, that's what I would like to say I did. In fact I started out with less rum and increased it at about three points in the cooking process. I'm pretty sure the final amount was 1/2 c. Then I added more mint to the rest of the jam as it cooked, and left the star anise in. Then I had to fish them out before putting it into jars. AND I cooked it too long, so ended up with candy rather than marmalade. It needs more sugar. BUT I think it still tastes pretty good for the first attempt. Will keep working on it.

And I need to learn to take better notes…
