Pear Ginger Jam

from my head

I had four overripe pears that I didn't want to just throw away, so I made jam. Or sweetened pear sauce. Or something. I just threw things in the pot based on my recent pear ginger jam making, and it turned out pretty good. Bear in mind I err on the side of unsweet, so other people might want more honey or to add sugar.

INGREDIENTS
4 ripe pears, peeled, cored, and chopped into tiny dice
3 T honey
10 g fresh ginger, grated (it was frozen, so I weighed it instead of measuring it; probably was equivalent to ~1 T)
2 tsp apple cider vinegar
1 tsp lemon juice
2 tsp rum (could stand to add more)
1/4 tsp ground cinnamon
1/8 tsp ground cardamom
1/8 tsp sea salt (do less next time)

METHOD
Put all ingredients into a saucepan along with ~1/4 water. Bring to a boil over high heat, then reduce heat and cook at a fast simmer or low boil for 30-45 minutes until the pears have begun to break down and the liquid has reduced to desired consistency. Check for seasonings.

This could easily be processed, but I was short on time so I didn't bother. Mine yielded 1/2 pint.
