Gingery Blueberry Butter

Inspired by Slow Cooker Blueberry Butter and Small Batch Blueberry Ginger Jam, both at

8 c pureed fresh blueberries
2 ice cubes of minced fresh ginger (~30 grams)
1 c sugar
2 T balsamic vinegar
1/2 tsp ground nutmeg
1/2 tsp ground ginger
1/2 tsp kosher salt

As in the linked recipe for slow cooker blueberry butter, pour the pureed blueberries and fresh ginger into a slow cooker, cover, and cook on high for an hour.

Stir up the blueberries and then cook on low another 4-5 hours, uncovered.

Stir in remaining ingredients and cook, uncovered, for another hour or until desired consistency is reached.

Pour into jars and process for 10 minutes.
