Creamy Cheddar Chowder

from a friend's cookbook from long ago

INGREDIENTS
2 c. boiling water
2 c. diced potatoes
1/2 c finely chopped broccoli
1 c diced carrots
1/4 c chopped onion
1 1/2 tsp salt [actually use ~3/4 tsp]
1/4 tsp pepper
1/4 c butter
1/3 c flour
2 c milk
2 c shredded cheddar cheese
1 c cubed cooked ham

METHOD
Add water to potatoes, carrots, broccoli, onions, salt, and pepper. Cover and simmer 10 minutes or until veggies are tender. Do not drain.

Make white sauce with flour, butter, and milk. Add cheese and stir until melted. Add undrained vegetables and ham. Heat through, but do not boil.

Variation: we usually add celery, leeks, peas, asparagus, and anything else that sounds remotely tempting.
