Red Pepper Walnut & Walnut Pesto

1 c walnut (or pecan) pieces, lightly toasted (or heavily, as the case may be, like mine)
1 large red bell pepper, coarsely chopped
2 garlic cloves
1/4 c chopped fresh Italian parsley
1/2 tsp salt
1/8 tsp freshly ground pepper
1/3 c extra virgin olive oil, or to desired consistency

Place the walnuts, bell pepper, garlic, parsley, salt, and pepper in a food processor bowl and process until finely chopped. With the machine running, slowly pour the olive oil through the feed tube and process until blended. Adjust seasonings to taste.

Serve tossed with cooked pasta.
