Cranberry-Apricot Chocolate Chews

From: King Arthur Flour Whole Grain Baking

Yield: 2.5 dozen cookies
Baking Temp: 350 degrees
Baking Time: 14-15 minutes

(Note: OMG, these are the best brown sugar cookies ever.)

INGREDIENTS
1/2 c unsalted butter
3/4 c packed light or dark brown sugar
2 T orange juice
1 tsp vanilla extract
1/2 tsp baking powder
1/4 tsp baking soda
1/4 tsp salt
1 large egg
1 1/4 c traditional whole wheat flour
2/3 c semisweet chocolate chips or chunks
2/3 c dried cranberries
2/3 c dried apricots, chopped
2/3 c chopped pecans

METHOD
Preheat the oven to 350 degrees F.

Cream the butter, sugar, orange juice, vanilla, baking powder, baking soda, and salt in a medium mixing bowl.

Beat in the egg, scraping the bowl. The mixture will look curdled; that's OK.

Add the flour, beating until smooth.

Stir in the chocolate chips, cranberries, apricots, and pecans.

Drop the dough by tablespoonfuls onto the prepared baking sheets.

Bake the cookies, reversing the pans midway through (top to bottom, bottom to top), until they're barely beginning to brown around the edges, 14 to 15 minutes. They won't look set in the center. Remove cookies from the oven and let them cool on the pan.

VARIATIONS
Feel free to substitute your own favorite dried fruits, or use different kinds of nuts. Just be sure you add a total of 2 cups of whatever fruits/nuts you choose.

Note of Experience: do NOT eat one of these straight from the oven. Wait at least 30 minutes for the flavors to set before eating; waiting until the next day is even better.
