Marinated Cucumbers

Adapted from a recipe from Thru the Grapevine Finger Lakes Region Cookbook

(Note: this recipe works best if the cucumbers are allowed to release as much moisture as possible, draining perhaps an hour or more while you do other things. Then you can use a towel to dry them after they've been rinsed. You can even press more moisture out at that point with the towel.)

2-3 cucumbers, peeled and thinly sliced
1/2 tsp salt (or so)
1 medium onion, thinly sliced
1 medium pepper of any color, thinly sliced
1/4 c cider vinegar
1/4 tsp salt
2 T sugar, to taste
dash of pepper

Place cucumbers in a colander and sprinkle with 1/2 tsp salt, tossing to coat. Allow to drain for 15-20 minutes.

Meanwhile, in a small bowl, mix together vinegar, 1/4 tsp salt, sugar, and pepper.

Rinse cucumbers and allow to drain thoroughly.

In a bowl, toss together cucumbers, onion, and pepper. Pour marinade over all and refrigerate for at least an hour or overnight, stirring occasionally.
