Mediterranean Kale

Adapted from a recipe submitted by "Julia Phillips" at

12 c chopped kale
2 T lemon juice
1 T olive oil, or as needed
1 T honey, or to taste
1 T minced garlic
1 tsp soy sauce
salt and black pepper, to taste
1/4 c sliced almonds
1/4 c dried cranberries

Place a steamer insert into a saucepan, and fill with a couple inches of water. Cover, and bring the water to a boil over high heat. Add the kale, recover, and steam until just tender, 2 to 4 minutes depending on thickness.

Whisk together the lemon juice, olive oil, garlic, soy sauce, salt, and black pepper in a large bowl. Toss steamed kale, almonds, and cranberries in dressing until well coated.
