Raw Kale Salad with Feta, Pine Nuts, and Cranberries

Recipe by "Nathan Lyon" from an unknown source; given to me by my coworker after a discussion about how much I like kale

INGREDIENTS
For the Salad
1 bunch curly kale
1/4 c pine nuts
1/4 c toasted walnuts, roughly chopped
1/4 c toasted almonds, roughly chopped
1/4 c pumpkin seeds (pepitas)
1/2 c dried cranberries, preferably unsweetened
3 large oranges
1/2 c crumbled feta cheese
Kosher salt and freshly ground black pepper, to taste

For the Vinaigrette
1 medium shallot, peeled and finely diced (3 T)
1 T red wine vinegar
3 T freshly squeezed orange juice (from the oranges)
1/3 c olive oil

METHOD
Strip the tender kale leaves from the stems; discard the stems. Rinse and dry the leaves, then roll them up and slice into thin strips to yield ~5 packed cups.

Cut the peel and pith from the oranges, then segment them by cutting between the dividers. Discard any seeds, but reserve the juice for the vinaigrette.

Combine the vinaigrette ingredients in a medium container with a tight fitting lid. Close the lid and shake well to combine, or whisk to combine.

Add the kale, nuts, seeds, cranberries, orange segments, and crumbled feta to a large serving bowl. Drizzle half the vinaigrette over the salad and toss to combine. Season with salt and pepper, and add more vinaigrette as needed.
