Fruits of the Earth Loaf

from King Arthur Flour Whole Grain Baking

Yield: One 8.5 x 4.5 inch loaf
Baking Temp: 350 degrees F
Baking Time: 45 minutes

(Note: I have made this bread but once, and remember only that I had planned to make it again. So it must have been pretty good!)

INGREDIENTS
1/3 C milk, heated to lukewarm
1/2 C lukewarm water
3 T honey
4 T unsalted butter, cut into 6 pieces
1/2 C mashed cooked yam or sweet potato
1 1/2 C traditional whole wheat flour
1/2 C old-fashioned rolled oats
1 1/2 C unbleached bread flour
1 1/2 tsp salt
1/2 tsp ground cinnamon
1/4 tsp ground nutmeg
1/4 tsp ground ginger
2 tsp instant yeast
1/2 C raisins
1/2 C chopped pecans or walnuts

METHOD
Combine all of the ingredients except the raisins and nuts, and mix and knead them by hand, mixer, or bread machine until you have a soft, smooth dough. Cover and allow the dough to rise until it's puffy and nearly doubled in bulk, 1 to 2 hours.

Lightly grease an 8.5x4.5-inch loaf pan. Gently deflate the dough, and knead the raisins and nuts into it. Shape it into an 8-inch log and place it in the prepared pan. Cover it gently with lightly greased plastic wrap or a proof cover, and allow it to rise until it's crowned about 1.5 inches over the rim of the pan, 1.25 to 2.5 hours. Near the end of the bread's rise, preheat the oven to 350 degrees F.

Uncover and bake the bread for about 45 minutes, tenting it with foil after 15 minutes. The bread is done when it is golden brown and an instant-read thermometer inserted in the center registers 190 degrees F. Remove it from the oven, and after a minute or so turn it out onto a rack. Brush with melted butter, if desired; this will keep the crust soft. Cool for 30 minutes before slicing.
