Fruits of the Earth Loaffrom King Arthur Flour Whole Grain BakingYield: One 8.5 x 4.5 inch loaf (Note: I have made this bread but once, and remember only that I had planned to make it again. So it must have been pretty good!) INGREDIENTS METHOD Lightly grease an 8.5x4.5-inch loaf pan. Gently deflate the dough, and knead the raisins and nuts into it. Shape it into an 8-inch log and place it in the prepared pan. Cover it gently with lightly greased plastic wrap or a proof cover, and allow it to rise until it's crowned about 1.5 inches over the rim of the pan, 1.25 to 2.5 hours. Near the end of the bread's rise, preheat the oven to 350 degrees F. Uncover and bake the bread for about 45 minutes, tenting it with foil after 15 minutes. The bread is done when it is golden brown and an instant-read thermometer inserted in the center registers 190 degrees F. Remove it from the oven, and after a minute or so turn it out onto a rack. Brush with melted butter, if desired; this will keep the crust soft. Cool for 30 minutes before slicing. |
