Spelt-Cream Cheese Biscuits

Yield: 10 to 12 (2-inch) biscuits

2 c whole spelt or whole wheat pastry flour
1/2 c white whole wheat (or all purpose) flour
1 T sugar
1 T baking powder
1 tsp salt
4 T cold butter
4 oz cream cheese
1 egg
1/2 c milk
Melted butter or additional milk for brushing the tops (optional)

Whisk together the flours, sugar, baking powder, and salt in a large mixing bowl. Cu in the butter until the mixture resembles coarse crumbs. Repeat cutting-in process with the cream cheese.

Whisk together the egg and milk in a small bowl or large measuring cup. Add, all at once. To the flour mixture, and blend lightly and quickly with a fork until the mixture is evenly moistened. Turn the dough out onto a floured work surface and fold the dough over on itself three or four times until it comes together. A bench knife or dough scraper work well for this.

Pat the dough out (or roll very lightly with a rolling pin) until it is 3/4 of an inch thick. Cut into squares or rounds, and transfer the biscuits to baking sheet that is lightly greased or lined with parchment paper. Brush with butter or milk, if desired, and then bake until the tops are golden brown, 20-22 minutes.
