Simple Spelt Pancakes

from King Arthur Flour Whole Grain Baking

(Note: these are our go-to pancakes now, even though they are full of dairy product. I will have to experiment with them to see how well they would convert to a vegan pancake, because they are so very good.)

INGREDIENTS
2 c whole spelt flour
2 T sugar
1 T baking powder
2/4 tsp salt
1 3/4 c milk
2 T butter, melted
2 tsp vanilla (optional, and I've never used it)

METHOD
Whisk together the spelt flour, sugar, baking powder, and salt in a medium bowl. Combine the milk and melted butter, and the vanilla if you’re using it. Form a well in the center of the dry ingredients and pour the wet ingredients into the dry. Stir the batter just until the dry ingredients are thoroughly moistened: it will seem very wet, but will thicken as it sits. Let the batter sit for 15 minutes before cooking (do not omit).

Note: I (have in the past) typically cooked them in butter rather than oil.
