Double Chocolate Cherry Cookies

(Note: I found this recipe while looking for ways to use up my old bottle of burgundy. I found this recipe in 2008 when I bought the bottle, and I think we still have a bunch of it. Be that as it may, these cookies were very tasty, but had a rather odd texture and were kind of sticky. Not sure what that was about, but I would try them again. If anyone else makes them and figures out a way to resolve those things, let me know!)

INGREDIENTS
1 1/2 c all-purpose flour
3/4 c good quality cocoa powder
1 tsp salt
1 tsp baking soda
1 stick butter, softened
3/4 c granulated sugar
3/4 c packed brown sugar
1 large egg
1 tsp vanilla extract
1/2 c dry red wine, such as burgundy
10 oz dark chocolate, broken into chunks
1 c dried tart cherries

METHOD
Preheat oven to 375 degrees F.

Combine flour, cocoa powder, salt and baking soda in a bowl.

In a bowl of an electric mixer, or with a handheld mixer, combine butter and sugars until fluffy. Add egg, vanilla, and wine and combine.

Slowly add the flour mixture in batches until just combined. Fold in the chocolate and cherries.

On a nonstick cookie sheet, place a heaping tablespoon of dough for each cookie about 2 inches apart from each other. Bake 8 to 10 minutes, or until tops are still soft looking but edges look firm.
