Ginger-Soy Glaze

Adapted from a recipe by DECODIANA from allrecipes.com

(Note: I have made this only once, but my notes from that experience - apart from spilling the marinade all over and having to make up a second batch - say that the flavor was surprisingly light, considering the ingredients. Also, tasty.)

INGREDIENTS
3 T honey
3 T soy sauce
3 T balsamic vinegar
1 tsp grated fresh ginger root
1 clove garlic, crushed or to taste
2 tsp olive oil
salt and pepper to taste
1 T vegetable oil

METHOD
In a shallow glass dish, stir together the honey, soy sauce, balsamic vinegar, ginger, garlic and olive oil.

Season fish, chicken, tofu, or whatever you're having with salt and pepper, and place into the dish. Cover, and refrigerate for 20 minutes to marinate.

Remove meat and cook, reserving the marinade.

Pour reserved marinade into the skillet you used to cook the meat or into a saucepan, and heat over medium heat until the mixture reduces to a glaze consistently. Spoon glaze over meat, and serve immediately.
