Apple Crumble Pie

(Note: this recipe comes from the 1981 version of the cookbook, which was a gift from my mom when I moved into my first apartment. I remember the first time I made it, trying to find mace without having any idea what it was and having no internet to check. This is the apple pie that David loves most… right now.)

INGREDIENTS
1 c sugar
2 T flour
1 tsp lemon peel
6 c apples, peeled and sliced
3 T lemon juice
1/4 c butter
1/2 c flour
1/2 tsp cinnamon
1/4 tsp ginger
1/8 tsp mace

METHOD
Combine 1/2 c sugar, 2 T flour, and the lemon peel. Sprinkle apple slices with lemon juice; add sugar mixture and toss to coat. Put apple mixture in a pastry-lined 9-inch pie plate.

Combine the remaining 1/2 c sugar with 1/2 c flour and the spices. Cut in the butter to form coarse crumbs, then sprinkle on top of the apples.

Bake at 350 degrees for 1 hour (or until brown and bubbly).

I usually add 1/2 c rolled oats to the topping for a bit more texture and heartiness.
